Can a website tell if you switch tabs?
No website can tell what you do outside of their current page — anything else would be a huge security risk. Thus if you open up another tab with Google or any other non-webcourses site, they can’t see what you do. Note, however, that they can (kind of) tell that you’ve left the page.

A teacher cannot know if you’ve switched tabs. But they can see how long you’ve taken on a specific question.

To my knowledge no, they can’t see your screen without you sharing it. But as you said, they can see (if enabled) when zoom isn’t the active window for more than 30 seconds. Source: I host zoom meetings all the time, but on a free account.
